Ingredients

  • 1 cup red lentils, rinsed (soaked for 2 -3 hrs)
  • 4 cups room temperature water
  • 2 tablespoon heaped EasyPeasy Tomato Paste
  • 1tbs sambar powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon red chili powder
  • ¼ teaspoon Turmeric
  • A small lime-sized ball of tamarind soaked in a little water
  • 1tbs oil for tadka
  • ½ tsp of asafoetida
  • 3-4 curry leaves
  • Small bunch chopped coriander leaves (optional)
  • Salt to taste
  • Vegetables of your choice (Drumstick, brinjal, pumpkin, green beans, carrot, shallots, snake/ash/ridge gourd, potato etc.)

Directions

    Pressure cook; rinsed dal, 4 cups water, 2 hwaped tablespoons EasyPeasy Tomato Paste, and ¼ teaspoon Turmeric for 2-3 whistles.

    Place cooker as is under running water for a half a minute for quick release of pressure without losing heat.

    Return to flame, add chili powder, sambar powder, hard vegetables and cook closed or pressure cook for one whistle. Add soft vegetables and open-cook till vegetables are cooked. Squeeze  out the rind and add the tamarind water.

    Heat tadka oil in a pan, splutter mustard & cumin seeds seeds, add asafetida and curry leaves. Turn off the flame and add chili powder.

    Add prepared tadka and salt to dal, mix well and serve.

    Garnish with chopped coriander leaves (optional)
